    “Sanmarzano” tomatoes ripened under the southern Italy’s sun, traditionally roasted with rosemary and garlic, seasoned with extra virgin olive oil, salt and pepper.

  • Uova in Trippa

    Traditional egg with tomato sauce(made with celery, carrot and onion), basiland parmesan wafer

  • Trippa in Umido con Patate

    Calf tripe stew, potatoes, tomato, carrot, celery, onion, garlic, chilli and orange.

  • Tagliatelle al Pomodoro e Basilico

    Tagliatelle egg pasta with tomato sauce (tomato, carrot, celery, onion, garlic and basil)

  • Salumi e Formaggi

    Platter of cured meats and 2/3 cheeses from Le Marche Region, served with Italian preserves, jams and a selection of honeys

  • Coniglio in Porchetta

    Boneless rabbit stuffed with bread, “guanciale” cured pork cheek and dill. Slowly oven roasted and served sliced along with a side of wild Italian chicory sauteed with garlic, chilli and “guanciale”. .
